Our Team

Samantha Stuk - Founder and Principal Dietitian
Samantha is an Accredited Practising Dietitian (APD) with 16 years of clinical experience across the public and private health sectors. In additional to her role as Principal Dietitian and Founder of The Nutrition Code, she is a senior dietitian within the Royal Melbourne Hospital endocrinology team. She has a special interest in all types of diabetes, metabolic syndrome and weight management, including nutritional management alongside pharmacotherapy (i.e. GLP-1 medications) and bariatric surgery. She ais also experienced in heart disease, digestive health (including IBS and coeliac disease) and sports nutrition. Samantha has undergone further training in motivational interviewing for behaviour change, and enjoys working in collaboration with her clients to develop goals and action plans, and overcome barriers to change. In addition to private consulting, Samantha runs large-scale nutrition and fitness challenges with health clubs nation-wide, writes nutrition content for print and online media, develops and analyses recipes for commercial sale, and runs corporate nutrition workshops.
Jessica Fuller - Consultant Dietitian
Jessica is an experienced Accredited Practising Dietitian (APD), and joined the Nutrition Code team in 2017. She is enthusiastic about food and helping clients set and fulfil their goals. She has a special interest in weight management, diabetes, heart disease, women’s health and food intolerance. Jessica is an empathetic and kind person who takes an understanding and non-judgemental approach to assisting her patients to improve their health. She has a passion for improving the wellbeing of her clients and can provide them with quality evidence-based advice that is individually tailored and considers lifestyle.


Gabriela Salant - Consultant Dietitian
Gabriela is an Accredited Practising Dietitian with experience supporting a broad range of health concerns, including cardiometabolic health, weight management, diabetes, women’s health, gastrointestinal health, disordered eating and eating disorders. She is passionate about helping individuals develop sustainable, balanced approaches to nutrition that support both physical health and overall wellbeing.
She takes a holistic, evidence-based approach, considering each client’s medical history, lifestyle, and individual needs. Gabriela works collaboratively with clients and the wider healthcare team to provide practical, personalised strategies that are realistic and achievable. Aiming to create a supportive, non-judgemental environment where clients feel empowered to improve their health outcomes and build confidence in their nutrition choices.
Stephanie Papalaskaris - Consultant Dietitian
Steph is an Accredited Practising Dietitian who is dedicated to helping people move, perform, and feel their best – no matter their starting point. Through her work, Steph empowers individuals with personalised, evidence-based nutrition strategies that support long-term health and success. Steph is skilled in daily healthy eating principles and chronic disease management, with a special interest in sports nutrition and performance. In addition to her work with The Nutrition Code, Steph works with elite and semi elite sports clubs in Australia, including the Melbourne Football Club (AFL), Casey Demons (VFL) and Werribee Football Club (VFL)

Why Use an Accredited Practising Dietitian?
Accredited Practising Dieticians (APDs) hold a university degree in medical and lifestyle nutrition therapy. APDs provide advice that is up-to-date, reliable, supported by evidence, and individually tailored to suit your goals. APDs are opened minded when it comes to selecting an appropriate nutrition strategy for you, but they are not swayed by the latest fads and food myths. They do not apply a ‘one-size fits all’ approach.
APDs are qualified to work in hospitals and medical centres, are recognised by Medicare and Private Health Insurance.
