Have you noticed how tasty and vibrant tomatoes are in summer? Not to mention, cheaper?

Tomatoes are a quintessential Summer vegetable (or fruit, technically) – so if you love them, now is the time to load up!

Here’s an easy, light meal idea, that heroes tomatoes and another seasonal vegetable – asparagus

(serves 4)

Ingredients:

500g chicken breast

Marinade:

¼ cup balsamic vinegar

2 tbsp olive oil

Salad:

350g asparagus,

400g cherry tomatoes, halved

1 tbsp olive oil

1 tbsp balsamic vinegar

40g feta cheese

Method:

  1. Mix together the marinade ingredients in a bowl. Add the chicken breasts to the bowl, cover and allow to marinate for ~30 minutes or more in the fridge.
  2. Preheat the oven to 200c
  3. Place chicken and marinade on a lined baking tray and bake for 20-25 minutes
  4. On another lined baking tray, scatter the asparagus, and tomatoes and drizzle with the olive oil and balsamic vinegar. Bake for 15 minutes
  5. Top the chicken and cooked veg with the feta.
