Have you noticed how tasty and vibrant tomatoes are in summer? Not to mention, cheaper?
Tomatoes are a quintessential Summer vegetable (or fruit, technically) – so if you love them, now is the time to load up!
Here’s an easy, light meal idea, that heroes tomatoes and another seasonal vegetable – asparagus
(serves 4)
Ingredients:
500g chicken breast
Marinade:
¼ cup balsamic vinegar
2 tbsp olive oil
Salad:
350g asparagus,
400g cherry tomatoes, halved
1 tbsp olive oil
1 tbsp balsamic vinegar
40g feta cheese
Method:
- Mix together the marinade ingredients in a bowl. Add the chicken breasts to the bowl, cover and allow to marinate for ~30 minutes or more in the fridge.
- Preheat the oven to 200c
- Place chicken and marinade on a lined baking tray and bake for 20-25 minutes
- On another lined baking tray, scatter the asparagus, and tomatoes and drizzle with the olive oil and balsamic vinegar. Bake for 15 minutes
- Top the chicken and cooked veg with the feta.
