A classic summer pairing – tomato and basil. Punchy flavours, super quick and easy, it’s an absolute winner! The kids will love the little bocconcini balls too

Serves 4

Ingredients:
1 roast chicken or 4 poached chicken thigh fillets
6 cups mixed lettuce
1 punnet cherry tomatoes, sliced
1 avocado, sliced
½ cup mini bocconcini balls
¼ cup basil leaves
4 tsp balsamic vinegar

Method:
Shred the chicken and serve on top of the lettuce in a bowl with the tomatoes, avocado, bocconcini and basil leaves. Drizzle with the balsamic vinegar
